We varied the recipe to make it our own, but it wouldn't have come about without her :)
It was getting late...we needed a quick meal...and this beauty of a recipe was complete and on the table in 20 minutes, and it was delicious!!
Creamy Pesto Pasta
2 tablespoons butter
1 cup heavy cream
3 tablespoons Pesto, (we used jarred this time)
3 tablespoons grated Parmesan cheese
1 small tomato (diced)
4 servings of pasta (we used Ronzoni Garden Delight rotini)
In a large saucepan, melt butter over med heat. Add in heavy cream, heat until it starts to bubble then add pesto and Parmesan cheese. Cook for 8-10 minutes until the sauce has thickened and then add diced tomato and simmer for 5 minutes.
Meanwhile....cook pasta according to package directions, drain and toss with the Creamy Pesto Sauce!
Serve with toasted french bread drizzled with Extra Virgin Olive Oil and cracked black pepper...TA DA.....dinner is served!
